Coalition Kitchen was built to solve a problem we experienced ourselves.

Balancing training, work, and everything else in life makes it hard to stay consistent with nutrition. We saw firsthand how much performance, recovery, and day-to-day energy depend on what you eat, but also how time-consuming it is to shop, cook, portion, and track it all.

So we built a better option.

Coalition Kitchen combines real cooking with performance-focused nutrition to give you meals that are ready when you are. No extra steps, no guesswork, just food that helps you stay consistent.

Max Dorin

Meet the Team Behind Coalition Kitchen


  • Co-Owner

    Max is the Co-Owner of Coalition Kitchen and the driving force behind the company’s menu development and kitchen operations.

    Originally from Upstate New York, Max moved to North Carolina to attend North Carolina State University, where he earned a degree in Food Science before gaining years of hands on experience working in restaurants and bars.

    As a longtime athlete and Black Belt in Brazilian Jiu Jitsu who spent years competing in MMA and BJJ, Max understands firsthand how difficult it can be to maintain a nutrition plan that is both effective and enjoyable. That experience became the foundation for Coalition Kitchen meals built with transparent labeling, balanced nutrition, and bold flavors inspired by cuisines from around the world.

    His goal is simple: create food that fuels performance while remaining approachable enough for athletes, busy professionals, and families alike.

Carl Escriva

  • Co-Owner

    Carl is the Co-Owner of Coalition Kitchen, where he focuses on brand growth, innovation, and customer experience.

    A lifelong athlete, Carl developed an early understanding of how proper nutrition impacts performance in the weight room, at practice, and in competition. He also built a passion for cooking at a young age, which continued through his time at NC State University, where he was a walk-on football player, competitive bodybuilder, and personal trainer.

    Through these experiences, Carl recognized a gap in convenient, high-quality food options for people trying to balance performance, health, and a busy lifestyle. That realization led him to co-found Coalition Kitchen, combining his background in fitness and food to create a service designed to make consistent, quality nutrition more accessible.

    His focus is on helping customers stay on track without adding complexity to their daily routine.

Eric Moon

  • Executive Chef

    Eric is the Executive Chef at Coalition Kitchen, where he leads culinary operations and menu development for the company’s nutrition-focused meal program.

    Raised in a food-forward family, Eric developed a passion for cooking at a young age, inspired by time in the kitchen with his parents and watching chefs like Emeril Lagasse. While his early love of food came naturally, his understanding of nutrition developed later through sports, where he became interested in how macronutrients fuel performance and recovery.

    After high school, Eric began working in restaurants across Raleigh, starting as a dishwasher and working his way through every station in the kitchen. Following the loss of his father in 2015, he began exploring the role food can play in healing and overall well-being, which deepened his focus on holistic cooking. That perspective aligned closely with Coalition Kitchen’s mission to use whole, preservative-free ingredients to support health and performance.

    His goal is simple: create food that people enjoy eating while also helping them feel and perform at their best.

We keep things simple and intentional.

  • We cook with real fats like grass-fed butter, avocado oil, coconut oil, and extra virgin olive oil

  • We don’t use artificial preservatives, flavors, antibiotics, or hormones

  • Every meal is portioned and weighed for consistency

  • We’re constantly testing new menu items and improving based on your feedback
